Spinach Turkey Meatballs made with extra lean ground turkey and fresh spinach make a deliciously healthy, quick and easy meal.
Our oldest daughter is living back home for a few months while waiting for an apartment to become available closer to work. She tries to eat healthy and brings her lunch everyday so Sundays are "meal prep" day.
One of the recipes she made recently were these Spinach Turkey Meatballs so I asked her to write down the ingredients so that I can share them with all of you as well.
These meatballs were so easy to make, are baked and were loaded with flavor. This recipe is perfect for lunch, dinner or even as a snack and yielded 32 meatballs. ~Enjoy!

Ingredients Needed
To make these meatballs you're going to need the following ingredients:
Ground Turkey: I prefer extra lean ground turkey (99/1), but you can use other cuts or even ground chicken or beef.
Fresh Spinach: Wash and thoroughly dry the spinach using a salad spinner.
Chopped Onion
Minced Garlic
Egg
Grated Pecorino Romano Cheese
Italian Breadcrumbs
Kosher Salt
Black Pepper

How do you make Spinach Turkey Meatballs?
Start by preheating the oven to 350 degrees F; then line the sheet pan with parchment paper.
Spray a skillet with cooking spray and heat over medium-high heat; then add the onion, garlic and spinach and cook until the spinach has wilted.
Add the spinach mixture to a mini food processor and pulse until blended; then add to the mixing bowl. Add the ground turkey, egg, grated cheese, breadcrumbs, salt and pepper; then mix well to combine.
Using a 2-Tablespoon scoop, portion out the turkey mixture into 32 meatballs lining them on the sheet pan. Place the pan in the oven and bake for 15 minutes or a minimum internal temperature of 165 degrees F.
Storage
You can store these Spinach Turkey Meatballs in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 3 months.

- 1 pound extra lean ground turkey
- 4 cups fresh spinach (washed and dried; approx. 10 ounces)
- ¼ cup chopped onion
- 1 tablespoon minced garlic
- 1 large egg
- 2 tablespoons grated pecorino romano cheese
- ¼ cup italian breadcrumbs
- ½ teaspoon kosher salt
- ⅛ teaspoon black pepper
