Chicken and Rice Sloppy Joe Skillet made with extra lean ground chicken and long grain rice in a sweet and tangy tomato broth.
We all love sloppy joe's on those tasty buns, but I wanted to experiment with a twist on the this favorite classic and came up with this Chicken and Rice Sloppy Joe Skillet.
This recipe is made in one pan with ground chicken and rice so it's super easy to prepare, less cleanup and is ready in 30 minutes. As an added bonus, it's also gluten and dairy free and a lot less messy than eating it on a bun!
Serve this skillet with your favorite vegetable or a tossed salad and you have a dinner that the whole family will love. ~Enjoy!
What is a Sloppy Joe?
A sloppy joe is a sandwich made on your favorite hamburger bun with ground beef, onions and a tomato based sauce.
Suggested Equipment
Ingredients Needed
To make this sloppy joe skillet you're going to need the following ingredients:
Ground Chicken: Opt for lean or extra lean ground chicken or turkey.
Canola Oil
Chopped Scallions: You can also substitute chopped onions.
Minced Garlic
Tomato Paste
Chicken Broth
Light Brown Sugar
Kosher Salt
Worcestershire Sauce
Long Grain Rice
How do you make Chicken and Rice Sloppy Joe Skillet?
Heat the oil over medium high heat in a large skillet; then add the ground chicken and brown for 5-7 minutes until no longer pink. Next, add the scallions and garlic and cook for another minute.
Combine the tomato paste, chicken broth, brown sugar, salt and Worcestershire sauce in a small bowl or large measuring cup; then whisk until blended.
Add to liquid the chicken along with the rice; then stir together. Reduce heat to low, cover the pan with a lid and cook for 20 minutes until the liquid has been absorbed and the rice is cooked through.
If the rice isn't fully cooked, the heat may have been too hot so just add a bit more chicken broth and cook down for another few minutes until the rice is cooked through.
