I can't emphasize enough how much I love easy recipes and this Dubliner Tomato Chicken with only four ingredients is one of them.
St. Patrick's Day is coming up and that means that we, meaning my family and I, get a little head start on holiday recipe sampling. I like to try at least one new recipe to shake things up a bit.
Last year I made Irish Champ, and before that I've made Irish Coffee, Corned Beef Hash and my favorites Irish Soda Bread and Mustard and Beer Corned Beef.
While searching for some new recipes to try, I came across this one for Dubliner Tomato Chicken Thighs from Kerrygold and couldn't wait to try it myself. It seemed easy enough and my family loves chicken thighs.
How do you make Dubliner Tomato Chicken?
To make this recipe, you'll need Dubliner Irish cheese; which is a robust aged cow's milk cheese from Ireland, plum tomatoes, fresh chopped parsley and bone-in, skin on chicken thighs.
Add your chicken to an oven safe baking dish; then place a slice of tomato under the skin, top with a slice of cheese and fresh parsley. Spray the chicken with cooking spray and season with salt and pepper; then bake in a 350 degree oven for 1 hour.
That's it! Simple right? And this Dubliner Tomato Chicken was absolutely delicious. We served ours with steamed rice and green beans. I'd definitely make this recipe again. ~Enjoy!

Ingredients
- 4 4(ounce) Chicken Thighs, bone-in, skin on
- 4 oz. Dubliner Irish Cheese
- 1 Plum Tomato, sliced
- 2 tbsp. Fresh Parsley, chopped
- Cooking Spray
- Kosher Salt, as desired
- Fresh Ground Black Pepper, as desired
Instructions
- Preheat oven to 350 degrees F.
- Add 1-ounce of cheese under the chicken skin; then top with a slice of tomato and parsley. Spray the chicken with cooking spray and season with salt and pepper. Bake for 1 hour.
