What makes Italian baked chicken thighs an easy dinner is their simplicity and minimal preparation. You just season the chicken, toss it on a sheet pan and let the oven do the work.

No complicated steps, no constant stirring—just one pan, bake, and done. Plus, chicken thighs are forgiving; they stay juicy and flavorful even if they cook a little longer than planned, making them perfect for busy weeknights.

Serve them with a quick salad, your favorite vegetable and side dish and you’ve got a hearty, no-fuss meal with barely any cleanup. ~Enjoy!

Ingredients Needed

To make this recipe you're going to need the following ingredients: 

Chicken Thighs: To help seal in the juices and keep the chicken moist while cooking, I like to use bone-in, skin-on chicken thighs.

You can use boneless and skinless thighs, but may adjust the cooking time as they will take less time. 

Extra Virgin Olive Oil

Lemon: Zest and juice

Garlic Powder

Crushed Red Pepper

Dried Italian Seasoning

Kosher Salt

How do you make Italian Baked Chicken Thighs?

Preheat the oven to 375 degrees F; then add the chicken thighs to a sheet pan. 

In a small bowl, combine the oil, lemon zest and juice, garlic powder, red pepper, Italian seasoning and salt; mix well. 

Using a pastry brush the mixture on top of each chicken thigh; then place the pan in the oven and cook 45-50 minutes or until the internal temperature is at least 170 degrees F. (I prefer to cook my chicken to 175-180 degrees F).

Remove the pan from the oven and allow to rest for 5 minutes before serving.

  • 4- (5-ounce) bone-in, skin-on chicken thighs
  • ¼ cup extra virgin olive oil
  • ½ lemon (zest and juice)
  • 1 teaspoon dried italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon crushed red pepper
