Spring is in the air and nothing beats the deliciously light flavors of lemon and basil; especially when tossed with fresh green beans. They are my favorite vegetable by far.
They're also one of the healthier vegetables out there and are low on carbohydrates, contain a lot of fiber, low on calories and are naturally low on sodium. Green beans are also very versatile in recipes as well.
One of my favorite ways to prepare them are by roasting them in the oven as they take on a caramelized flavor as well.
How do you make Lemon Basil Green Beans?
What I love most about this recipe is its simplicity. All you need are fresh green beans, lemon zest and fresh chopped basil. Start by preheating the oven to 425 degrees F; then trim the ends of your beans with a knife to remove any stems and rinse under cold water.
Place the green beans in a double boiler and steam for about 3 minutes after the water starts to boil. Drain the water from the bottom pot; then add the beans. Next, add the lemon zest, basil, salt and pepper; then toss to coat.
Spray a baking sheet with cooking spray, add the beans to the pan; then roast for about 10 minutes. If you don't want to roast them, you can also add a bit of EVOO or butter to the pot and saute them on top of the stove, but I really like the flavor of roasting vegetables.
