This Mediterranean Tomato, Mozzarella and Celery Salad is a twist on one of my favorites and I just love the crunch the crisp celery adds; not to mention the gorgeous color.
My favorite all time salad is the classic tomato, mozzarella and basil salad or Caprese Salad if you will. I generally make mine with balsamic vinegar and it’s a huge hit, but wanted to experiment with something new and came up with this Mediterranean Tomato, Mozzarella & Celery Salad.
How do you make Tomato, Mozzarella and Celery Salad?
For this salad I also used the Ciliegine mozzarella; which are the smaller, bite sized cheese balls; a mixture of Sunburst golden tomatoes and Cherub grape tomatoes and crisp celery.
For the dressing I used a simple mixture of fresh squeezed lemon juice, oregano (I prefer fresh but didn’t have any so I substituted dried oregano for this recipe), extra virgin olive oil, salt and pepper.
This salad was FANTASTIC! It was light and lemony; sweet and crunchy all in one. It also only takes about 10 minutes to make; which is great for those last minute get togethers. ~Enjoy!
