Oatmeal Blueberry Crumb Bars

These delicious crumb bars are made with fresh blueberries and lemon on top of a crunchy crust made from oats, brown sugar and butter.

This easy recipe combines the goodness of oats and the sweetness of blueberries to create a delicious treat that's perfect for any time of day. The fresh plump juicy blueberries burst open into your mouth with every delectable bite!

My family loves blueberry desserts, but I don't make them very often. Mainly because it's just the two of us at home now and we try to limit the sweets. 

When my grandmother was still alive,  Blueberry Crumb Cake was her favorite. So whenever she came for dinner or was with us on a holiday, I made sure to have one ready.

Though that recipe uses blueberry pie filling, I'm sure she'd love these bars just as much. This recipe makes 12 bars and is ready in 45 minutes!~Enjoy!

  • Nonstick 7x11 Baking Pan (brownie pan)
  • Dry Measuring Cup
  • Measuring Spoons
  • Powder Sugar Duster

Ingredients Needed

Before you start making your oatmeal blueberry crumb bars, make sure you have all the necessary ingredients. You will need: 

All Purpose Flour

Rolled Oats: You can use regular or quick oats in this recipe. 

Light Brown Sugar

Butter (softened)

Blueberries: You can use fresh or frozen blueberries in this recipe. If you prefer, you can also use canned blueberry pie filling in place of making your own filling as well. 

Granulated Sugar

Cornstarch

Fresh Lemon (zest and juice)

Confectioners Sugar (optional): Dusting some powdered sugar on top before serving adds visual appeal, but it's not necessary. 

Cooking Spray: This is used to grease the pan, but you can also use melted butter.

Make the Crumb Crust

Start by preheating your oven to 350°F (175°C). In a large mixing bowl, combine the flour, oats, and brown sugar.

Mix well; then add the softened butter to the bowl and mix until the mixture becomes crumbly. Reserve 1 cup of the mixture; then use your hands to press the remaining mixture into the bottom of a greased 7x11 baking pan.

This will form the base of your oatmeal blueberry crumb bars. Make sure to press it down evenly so that it's compact and won't crumble apart when you add the blueberry filling on top.

Blueberry Filling

To make the blueberry filling, combine the blueberries, sugar, cornstarch, and lemon zest and juice in a medium bowl. Spread it evenly over the oatmeal crust in the baking dish.

Bake the Crumb Bars

Next, sprinkle the remaining oatmeal crumb mixture on top of the blueberry filling, making sure to cover it completely. Bake in the oven for 30 minutes or until the top is golden brown and the blueberry filling is bubbling.

Let it cool completely before cutting into bars; then sprinkle with confectioners sugar if desired before serving. 

Storage

You can store these crumb bars in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 1 month. To defrost, remove from the freezer at least 3 hours before serving.

Instructions
