This Parmesan Garlic Butter Spaghetti Squash is super tasty, healthy and makes a delicious quick side dish. 

Parmesan Spaghetti Squash made with butter, garlic and Parmesan cheese is super tasty, healthy and quick to make. 

It's amazing how taste buds change, because when I started this blog 10 years ago I didn't care for spaghetti squash at all. Now, I love to find new ways to incorporate it into our meal planning.

So far I've made several dinner all-inclusive recipes like Italian Stuffed Spaghetti Squash, Chicken Pesto Spaghetti Squash and Turkey Bolognese Spaghetti Squash.

However, I never made this vegetable as a side dish until I tried this easy to make Parmesan Garlic Butter Spaghetti Squash. 

Parmesan Garlic Butter Spaghetti Squash

WHAT’S THE BEST WAY TO COOK SPAGHETTI SQUASH?

There are two ways to cook spaghetti squash. 

  1. Oven Method
  2. Microwave Method

First cut the spaghetti squash in half; then scoop out the seeds. If you're using the oven, preheat to 425 degrees F, place the squash flesh side down on a baking sheet and roast in the oven for 30-40 minutes.

For this recipe I was looking to make something quick so I used the microwave method. Cut the spaghetti squash in half; then scoop out the seeds. Place the squash flesh side down on a microwave safe dish and add about 1-2 tablespoons of water.

Microwave on high for 8-10 minutes; then remove carefully. The outer skin will be a bit softer, but you'll know if it's done if you can take a fork and scrape it easily inside the flesh and spaghetti like strands form.

How do you make Parmesan Garlic Butter Spaghetti Squash?

For this recipe you'll need spaghetti squash, garlic, butter and grated Parmesan cheese. Cook the spaghetti squash as described above and scrape out the flesh with a fork and place in a bowl. I used the microwave method. 

Next, add the remaining ingredients, toss to coat until the butter melts; then serve.  That's it! Easy right?

This Parmesan Garlic Butter Spaghetti Squash was so tasty on it's own served as a side dish, but would taste great if you added some grilled chicken or shrimp on top too.

Since our squash was pretty small, it was perfect for two people. It's also gluten free and Keto diet friendly ~Enjoy!
