Baked oatmeal made with rolled oats, pumpkin puree and spices is a deliciously hearty Fall breakfast idea.

I only recently started enjoying baked oatmeal and this pumpkin pie version is fantastic. It's Fall in a bowl. Warm and comforting. Perfect for breakfast. 

This Pumpkin Pie Baked Oatmeal is also gluten free for those following a special diet. 

The best part is that you can make this; then keep refrigerated for up to 3 days and reheat for a quick and easy breakfast.

We added some chopped pecans and sprinkled some confectioners sugar on top before serving.~Enjoy!

Ingredients Needed

To make this recipe you're going to need the following ingredients: 

Half & Half: I like to use a mixture, but you can use all milk or heavy cream instead. I haven't tried this recipe with non-milk products, but I'm sure it would work-just won't be as creamy. 

Egg

Light Brown Sugar

Vanilla Extract

Pure Pumpkin Puree

Old Fashioned Oats: Make sure they are not the quick or steel cut oats. 

Pumpkin Pie Spice

Optional Garnish: Could include chopped nuts like pecans or walnuts or sprinkle with confectioners sugar.

How do you make Pumpkin Pie Baked Oatmeal?

Preheat the oven to 375 degrees F. Combine the half & half, egg, sugar and vanilla; then whisk until smooth. Fold in the pumpkin, oats and pumpkin pie spice; mix well. 

Add the mixture to a 2-quart baking dish; then place the dish on top of a sheet pan. This will help catch any drippings and allow you to transfer the dish easier to and from the oven. 

Bake for 45-50 minutes until the oatmeal is set and slightly firm to the touch. Remove from the oven and garnish as desired. 

Storage

Allow the oatmeal to cool completely; then cover with aluminum foil or plastic wrap and keep refrigerated for up to 3 days.

To reheat, portion out a desired serving into a bowl; then reheat in the microwave on high for 1 minute. You may want to add another drop or two of half&half or milk to help loosen it up a bit.

  • 2 teapsoons vanilla extract
  • 1 cup pumpkin puree
  • 1 ½ cups old fashioned oats
  • 1 teaspoon pumpkin pie spice
  • (optional) garnish (nuts or confectioner's sugar)
