I'm not a huge fan of broccoli, but will eat it when roasted like this Broccoli with Garlic or in soups or mixed in with something else like pasta. However, my family loves it so we make it at least once a week.
I do love roasting vegetables though because it adds such a nice flavor. Some of our favorites are Parmesan Roasted Green Beans, Roasted Vegetable Ratatouille and Sriracha Lime Roasted Cauliflower.
What is Broccoli?
The word broccoli comes from the Italian word "broccolo"; which means "the flowering cabbage". Broccoli was first introduced to the United States by Italian immigrants, but did not become widely known until the 1920's and is high in Vitamin C and dietary fiber.
How do you make Roasted Broccoli with Garlic?
For this recipe you'll need fresh broccoli, garlic, EVOO, lemon zest, Kosher salt and black pepper. Trim the broccoli stems, cut into florets; then rinse broccoli under cold water.
In a small bowl, combine the oil, garlic, lemon zest, salt and pepper. Add broccoli, toss to coat, place on a baking sheet; then roast in a preheated 425 degree F oven for 15-20 minutes until the broccoli is fork tender.
