How do you make Roasted Pink Grapefruit?
Start by preheating the oven to 425 degrees F; then peel the grapefruit. Cut the fruit into bite sized chunks; then add the pieces to a mixing bowl.
Next, add the mint, honey and salt; mix well. Place the fruit in an even layer on a baking sheet for approximately 8-10 minutes; just enough so that it warms slightly while still keeping it's shape.
Remove the pan from the oven, cool completely; then refrigerate for up to 4 days.
