A closeup of Spinach and Soufflé in a dish.

Spinach is one of my personal favorite vegetables so I'm not sure why I haven't made a soufflé before. That wasn't always the case though.

Growing up I wasn't a fan of vegetables at all. But as I aged, I found that they weren't as bad as I remembered; especially if they were fresh with frozen being a close second.

After all, frozen vegetables can be even healthier than fresh because they are usually picked; then flash frozen at the peak of freshness.

Some of our favorite recipes using frozen vegetable are Sautéed French Green Beans with Mushrooms, Garlic and Herb Creamed Corn and Cavatelli and Broccoli.

By using frozen spinach, it made this soufflé super easy to make and was ready in 30 minutes. It was delicious and so light, airy and flavorful.

What is a soufflé?

A soufflé is an egg based dish that is baked with variety of different ingredients. It can be served as a main dish, side dish or as a dessert if sweetened.

Equipment

  • Microwave Safe Steamer
  • Mixing Bowl
  • Whisk
  • 1-Quart Oven Safe Baking Dish

  • frozen chopped spinach
  • eggs
  • milk
  • garlic powder
  • ground nutmeg
  • kosher salt

Substitutions

I chose to use Cheddar Jack cheese, but you can use any of the following cheeses:

  • Cheddar
  • Havarti

How do you make Spinach Soufflé?

Start by adding the spinach to a microwave safe steamer; then cook on high for 5-6 minutes until defrosted. Drain the excess water; then place in a mixing bowl.

In a small bowl, add the eggs, milk, garlic powder, nutmeg, salt and pepper; then whisk together and add to the spinach along with the cheese. Mix together; then place in the 1-quart baking dish.

Bake at 350 degrees for 30 minutes or until the soufflé is puffed up in the center and the top springs back when gently touched.

Serving Suggestions

This Spinach Soufflé serves four people and would taste great with Tuscan-Style Grilled Rib Eye Steak, Dijon Balsamic Roasted Chicken

or Caprese Stuffed Pork Loin .

Can you make this spinach casserole in advance and freeze it a few days ahead of time?

I haven't tried it, but I don't think it would hold up well.

This was by far the best spinach soufflé I’ve ever had! So flavorful!

Use the seasonings as described, all 4 of my kids loved it.
