Weekly Meal Plan Week #10
Monday: Individual Chicken Pot Pie
These Individual Chicken Pot Pies are so easy to make. In fact, this was one of the first recipes I shared on my blog over 5 years ago and is also in my cookbook. Though the original recipe called for making an entire pot pie, the filling is the same with the addition of horseradish in this recipe just because I like a little extra kick. In 45 minutes you can have a home cooked meal waiting on the table and I tend to make this recipe often; especially when making a large roaster chicken over the weekend. I also like how they're in individual serving sizes, which comes in handy if your family eats dinner at different times like mine usually does.
Suggested Sides: Tossed Salad
Tuesday: Lemon Basil Grilled Pork Chops
These pork chops marinated in a brine with fresh lemon juice and basil are deliciously light, flavorful and juicy. Use the brine on grilled chicken too! They only take about 15 minutes to cook; however, plan ahead so you can marinate them during the day or overnight before grilling.
Suggested Sides: Tomato & Cucumber Quinoa Salad
Wednesday: Low Fat Chicken Marsala Rigatoni
Did you ever feel like making Chicken Marsala at home, but didn’t have the time; especially on a busy weeknight? Well now you can enjoy all of the flavors you love in one complete dish with this Low Fat Chicken Marsala Rigatoni. For this recipe I used boxed, dry rigatoni pasta; however, you can use whole wheat, whole grain, gluten free, frozen or homemade pasta instead. The entire meal takes only 30 minutes to make from start to finish so it makes a deliciously quick weeknight meal.
Suggested Sides: Tossed Salad and for dessert, try this recipe for Apple Chai Cobbler.
Thursday: Jack Daniel's Tennessee Honey Marinated London Broil
Beef London Broil marinated in Jack Daniels Tennessee Honey Whiskey and spices; then grilled to perfection. I just had to throw this one into the mix at some point because it's still one of the most popular recipes on my blog to date.
Suggested Sides: Parmesan & Rosemary Whipped Potatoes and Sea Salt Roasted Green Beans
Friday: Spinach & Artichoke Flatbread
This Spinach & Artichoke Flatbread made with baby spinach, artichoke hearts and a lemony, cheese sauce is perfect for pizza night or game day snacking. The best part is that it only takes 30 minutes to make!
Suggested Sides: Tossed Salad and for dessert, try this recipe for Oreo Lemon Drops.
