Getting dinner on the table just got that much easier with my Weekly Meal Plan geared towards creating family friendly meals that are easy to make at home using simple ingredients and directions. Monday: Deconstructed Roasted Eggplant Parmesan

Deconstructed Roasted Eggplant Parmesan

Eggplant Parmesan is my absolute favorite food to eat and in my opinion, the ultimate comfort food. But I wanted to try a new way to make it that would save me some time and be a little healthier, so I came up with this Deconstructed Roasted Eggplant Parmesan. This meal serves 4, is ready from start to finish in 40 minutes and is only about 215 calories per serving.

Suggested Sides: Tossed Salad

Tuesday: Crock Pot Sloppy Joe's

Sloppy Joe's are one of my family's favorite meals and it's so quick to prepare too. Simply brown some ground beef; then add chopped onions and garlic. You can also add some chopped green peppers, but my family doesn’t like them so I left them out. Add the beef mixture to your crock pot along with the seasonings and allow to to simmer in your crock pot on warm or low for 6-8 hours or high 2-4 hours. Because the meat is already cooked, you can leave it in there for quite a while to get all of those flavors melded together. When you’re ready to eat, place some of the mixture on your favorite roll and dig in!

Suggested Sides: Homemade Coleslaw

Wednesday: Jagerschnitzel

Jägerschnitzel

Jägerschnitzel is a German or Austrian dish made of pork or veal cutlets; then topped with a mushroom, brown gravy. It's delicious and only takes about 30 minutes to make which makes it perfect for those busy weeknights.

Suggested Sides: Sour Cream & Chive Yukon Gold Mashed Potatoes and Butter Roasted Carrots & Parsnips with Oregano

Thursday: Champagne Braised Chicken with Grape Tomatoes & Capers

Champagne Braised Chicken with Grape Tomatoes & Capers

One-pot meals like this Champagne Braised Chicken with Grape Tomatoes & Capers help make meal planning a snap during busy weeknights. You can even make it the night before; then just reheat when you're ready to eat.

Suggested Sides: Tossed Salad

Friday: Rigatoni Martino {Carraba's Copycat}

Rigatoni Martino is my homemade version of Carraba's Restaurant popular pasta dish. It's made with a combination of sun dried tomatoes, mushrooms, grilled chicken, and rigatoni tossed in a pink sauce then topped with ricotta cheese and scallions. How can you go wrong?

Suggested Sides: Rosemary Semolina Boule Bread (heat the bread; then dip in olive oil with salt and fresh ground black pepper...YUM!) and for dessert, try this recipe for Lemon Cream Cheese Poundcake.
