Make your fried chicken a little healthier with this Zesty Buttermilk Baked Chicken by adding a little Italian dressing mix and baking instead of frying.
I had a little buttermilk left after making my recipe for Irish Soda Bread, so I decided that making fried chicken would be a great use for it. However, I wanted to make it a bit healthier and came up with this Zesty Buttermilk Baked Chicken.
Back in my early 20's I used to love going to the local diner for fried chicken and Disco fries. Not the healthiest option, but man did it taste good. That was when I could just about anything I wanted and never gained a pound.
Now, I have to find ways to make some of my favorite foods a little bit healthier and baking the chicken tastes just as good, if not better in my opinion, because it's not as greasy.
How do you make Zesty Buttermilk Baked Chicken?
For this recipe you'll need chicken parts, buttermilk, Zesty Italian Dressing Mix, Italian seasoned breadcrumbs and cooking spray.
You can purchase your chicken whole and cut it down into parts yourself or buy parts already cut up; like just the legs or thighs. Whichever way works best for you and is more economical.
Also, if you don't have buttermilk, you can combine 1 cup of milk +1 tablespoon of lemon juice or white vinegar and let it rest for about 5 minutes until it thickens.
Start by combining the buttermilk and Italian dressing mix together in a bowl and mix well. Add the chicken to a resealable plastic bag; then add the buttermilk mixture and refrigerate for at least 4 hours or up to overnight.
When you're ready to cook, preheat the oven to 375 degrees F and add the breadcrumbs to a bowl. Dip each piece of chicken into the breadcrumbs; then place on an oven safe baking dish.
Spray the top of the chicken with cooking spray and bake for 50-60 minutes or until the internal temperature reads 180 degrees F on an instant read thermometer.
By adding in the Italian dressing mix, it really gave the chicken a nice, zesty flavor. Not to mention the chicken was extremely moist and fall off the bone delicious! ~Enjoy!

Oh, wow. So sorry to hear your date went like that.
I've been in that situation before. It's bad all the way around. I always go for the underdog and give chance after chance for things to improve on my visit...but there's been times it just doesn't.
And what's worse...is it seems the establishment just doesn't even care.
I see people like you and Joan and others who have such a talent with food and it makes me wonder why those without that talent, pursue that business.
You're a first class lady and I can only imagine the first class treatment around your table.
