I came across one of those old cookbooks my father in law had given to me with a recipe from Balducci's in NYC for Lambchops Pizzaiola. Since I don't eat lamb, I decided to try it with pork chops and simplified it a bit by making it on top of the stove.

What is Pizzaiola?

Generally speaking the term 'Pizzaiola' means a sauce that is made pizza-style with tomatoes, garlic and cheese. The sauce is usually used on top of meat and is believed to originate from the Neapolitan region of Italy. Another recipe we make often is Neapolitan Ragu; which comes from the same region. 

Before seeing this recipe made with lamb, I've only ever seen it on restaurant menus made with beef. Just like parmesan-style recipes, pizzaiola can be made using chicken, seafood and pork too.

The original recipe instructed to cook the meat in the oven, but I opted to use my skillet. This method works great; especially with thin  cut pork chops; which cook quickly. In fact, you can even use thin sliced chicken breasts with this recipe as well.

How do you make Pork Chops Pizzaiola?

For this recipe you'll need boneless center cut pork chops, EVOO, oregano, fire roasted diced tomatoes, garlic and shredded Mozzarella cheese. When selecting your pork chops, make sure they are about 1-inch thick.

If they are thicker than that, the pork chops might get overcooked on the outside and not be cooked through. You can also use the bone-in thin cut pork chops as well. 

Skillet Pork Chops Pizzaiola

Start by adding the oil to a large skillet; then heat over medium-high heat. Season both sides of the pork with salt and pepper; then place in the hot pan. Brown 3-4 minutes per side.

In a small bowl combine the tomatoes, oregano, and garlic and mix together. Place the tomato mixture on top of the chops; then sprinkle the cheese on top. Cover the pan with a lid, lower the heat to low and simmer 3-5 minutes until the cheese is melted.

Pork Chops Pizzaiola are one of my new favorite pork chop recipes. They were delicious, super simple and quick to make too; perfect for those busy weeknights!

The entire meal was ready in about 15 minutes and I served it with Green Beans with Tomato and Garlic and Mashed Potatoes. If you are following a low carb diet, this recipe is also Keto friendly and gluten free. ~Enjoy!

Ingredients
  

  • 4 1-inch Thick Boneless Center Cut Pork Chops
  • 1 tbsp. Extra Virgin Olive Oil
  • 1 c. Fire Roasted Diced Tomatoes
  • 1 tbsp. Minced Garlic
  • 1 tbsp. Dried Oregano
  • 1 c. Mozzarella Cheese, shredded
  • Kosher Salt, to taste
  • Black Pepper, to taste

Instructions
 

  • Start by adding the oil to a large skillet; then heat over medium-high heat.
