Suggested Equipment
- 12-Inch Skillet with Lid (stainless steel or cast iron)
- Meat Thermometer
- Small Mixing Bowl
- Whisk
Ingredients Needed
Pork Chops: I opted for center cut bone-in pork chops that were 10-ounces each. Because of the bone, you're left with approximately 6-ounces of meat; which was plenty. You can use boneless pork chops in this recipe though cooking times may vary depending on the thickness of the pork chop.
All Purpose Flour
Canola Oil
Butter
Mustard: You can use any type of mustard you like. I used Dijon, but a nice whole grain mustard would work too.
Honey
Chives: Fresh chopped or dried is fine in this recipe. It adds some more flavor and works well as a garnish.
Heavy Cream: You're only using ⅓ cup, but if you want to reduce the calories you can use half and half or milk. Other milk alternatives may not yield a creamy sauce without the addition of a thickening agent.
Kosher Salt
Cracked Black Pepper
cooking the pork chops in a honey mustard cream sauce
Dredge each pork chop in the flour; coating on both sides and remove the excess. Add the oil and butter to the skillet and heat over medium heat until the butter is melted.
Add the pork chops to the pan and cook 3-4 minutes per side or until the internal temperature reaches at least 145 degrees F.
While the meat is cooking, combine the mustard, honey, chives and heavy cream and whisk until smooth.
Once the pork chops are at that medium-rare temperature of 145 degrees F, you can add the sauce to the pan, reduce heat to low, cover the pan with a lid and cook for an additional 3-5 minutes.
For medium pork chops the internal temperature should be between 150-155 degrees F or medium well between 155-160 degrees F.
When at your desired temperature, plate the pork chops; then spoon the extra sauce on top.
Serving Suggestions
The creamy sauce is perfect on top of mashed potatoes, rice or egg noodles.
Serve with your favorite vegetables like Garlic Green Beans, Honey Brown Sugar Carrots, Roasted Garlic Mashed Cauliflower or Spinach Soufflé.
