Spinach Soufflé made with frozen spinach, spices and shredded Cheddar Jack cheese makes a tasty vegetable side dish.
Spinach is one of my personal favorite vegetables so I'm not sure why I haven't made a soufflé before. That wasn't always the case though.
Growing up I wasn't a fan of vegetables at all. But as I aged, I found that they weren't as bad as I remembered; especially if they were fresh with frozen being a close second.
After all, frozen vegetables can be even healthier than fresh because they are usually picked; then flash frozen at the peak of freshness.
Some of our favorite recipes using frozen vegetable are Sautéed French Green Beans with Mushrooms, Garlic and Herb Creamed Corn and Cavatelli and Broccoli.
By using frozen spinach, it made this soufflé super easy to make and was ready in 30 minutes. It was delicious and so light, airy and flavorful.

How do you make Spinach Soufflé?
Start by adding the spinach to a microwave safe steamer; then cook on high for 5-6 minutes until defrosted. Drain the excess water; then place in a mixing bowl.
In a small bowl, add the eggs, milk, garlic powder, nutmeg, salt and pepper; then whisk together and add to the spinach along with the cheese. Mix together; then place in the 1-quart baking dish.
Bake at 350 degrees for 30 minutes or until the soufflé is puffed up in the center and the top springs back when gently touched.
