Spinach Nuggets made with Italian breadcrumbs and grated Pecorino Romano cheese are so simple to make, kid friendly and mom approved!
Several years ago I made and shared this recipe for Spinach Nuggets on my Weekly Newsletter. It was one of those quick and easy recipes I thought kids (and parents) would love. Mine did!
Even now that you can purchase them already prepared in your local grocers freezer section, I still prefer using fresh ingredients.
How do you make Spinach Nuggets?
For this recipe you'll need frozen chopped spinach, egg whites, Italian seasoned breadcrumbs, Pecorino Romano cheese and garlic powder. The entire recipe takes less than 30 minutes to make and yields 1 dozen.
Start by preheating the oven to 375 degrees F. Add all ingredients to a bowl and mix well; then line a baking sheet with parchment paper.
Using a small cookie scoop, scoop out round balls; approximately 1-inch in diameter, onto the pan. Bake for 15 minutes until firm; then serve hot. That's it! Simple right?
My kids loved this recipe and I'm not going to lie, my husband and I did as well. Kids tend to love food they can hold in their hands and eat in smaller bites, and these Spinach Nuggets were perfect. Not to mention its a great way to get them to eat their veggies. ~ Enjoy!

Ingredients
- 1 c. Frozen Spinach, defrosted and drained
- 1 large Egg White
- ½ c. Italian Breadcrumbs
- 1 tbsp. Grated Pecorino Romano Cheese
- ¼ tsp. Garlic Powder
Instructions
- Preheat oven to 375 degrees F.
- Add all ingredients to a bowl and mix well; then Line a baking sheet with parchment paper.
- Using a small cookie scoop, scoop out round balls (approx. 1-inch in diameter) onto the parchment paper.
- Bake for 15 minutes until firm. Serve hot.
