There are a few vegetables we make on a weekly rotation like zucchini, green beans and carrots. So I'm always looking for ways to experiment with something new to liven up our meal planning.
Fresh carrots are crunchy and have a natural sweetness that's perfect for snacking or to serve as a side dish to any meal. These Balsamic Glazed Roasted Carrots were simple to make, sweet and delicious. ~Enjoy!

Ingredients Needed
To make these roasted carrots you're going to need the following ingredients:
Carrots: You can use any fresh carrots, but I used regular, organic carrots; then peeled and sliced them diagonally into ½-inch thick pieces.
Balsamic Glaze: Balsamic glaze is thicker and sweeter than balsamic vinegar and adheres better to the carrots.
Honey
Extra Virgin Olive Oil
Kosher Salt
Black Pepper
How do you make Balsamic Glazed Carrots?
Preheat the oven to 425 degrees F. Peel the carrots, trim the ends; then slice into ½-inch thick diagonal pieces and place in a bowl.
Next, add the balsamic glaze, honey, oil, salt and pepper and toss to coat. Place the carrots in a single layer on a small roasting pan; then roast in the oven for 25-30 minutes until the carrots are tender and golden brown.
Serving Suggestions
You can serve these carrots with a variety of main entrees like Italian Herb Encrusted Roast Beef, Eggplant Rollatini, Pork Scaloppine with Lemon Cream Sauce or Pollo Rosa Maria.

- 1 tablespoon balsamic glaze
- 1 tablespoon honey
- 1 tablespoon extra virgin olive oil
- ¼ teaspoon kosher salt
- dash black pepper
