These homemade super chocolatey brownies are made in a skillet with dark and semi-sweet chocolate chunks and fresh bing cherries.
I love experimenting with new recipes; especially when I'm trying to use up what I have on hand. My husband and daughter recently went to the produce market and bought some fresh bing cherries. They were super hearty and delicious!
They were starting to go bad so instead of freezing them, I made these Chocolate Chunk Cherry Brownies.
These brownies were so rich, gooey and delicious. The combination of the chocolate chunks and the cherries made this one of my new favorite desserts. Serve warm with some vanilla ice cream or whipped cream for a tasty Summer treat. ~Enjoy!
Equipment Needed
Ingredients Needed
Butter: I very rarely have unsalted butter on hand, so I used salted and this recipe came out great. You can also use unsalted.
Semi-Sweet Chocolate
Granulated Sugar
Vanilla Extract
Salt
Eggs
Dark Chocolate Chunks
Bing Cherries: Bing cherries are in season from the end of Spring to the beginning of Summer so they're in abundance right now, but you can also use the frozen kind during the off-seasons.
All Purpose Flour
Cooking Spray
Preheat the Oven
Preheat the oven to 350 degrees F; then spray a 10-inch cast iron skillet with cooking spray.
Pit the Cherries
When using fresh cherries, you'll have to remove the pits using a cherry pitter. It's definitely safer, but if you're careful, you can also use a pairing knife to cut around the pit.
Once the cherries are pitted, you can cut them in half or larger pieces.
Make the Brownie Mix
Melt the butter and semi-sweet chocolate in a medium saucepan over medium heat. Remove the pan from the heat and add the sugar, vanilla extract, salt and eggs.
Mix well with a wooden spoon until combined; then fold in the dark chocolate chunks and 1 ½ cups of the cherries. Pour the mixture into the skillet; then top with the remaining ½ cup of cherries.
Bake the Chocolate Chunk Cherry Brownies
Place the skillet in the oven and bake for 20-25 minutes until the top and sides have set, but the center is still on the gooey side.
Using a pot holder, carefully remove the skillet from the oven, allow to cool slightly before serving warm with vanilla ice cream or whipped cream.
