Apple Pie Truffles made with graham crackers, cream cheese and grated apples; then dipped in a crunchy white chocolate coating.
Apple picking season is here and since we live in northwest NJ on the border of New York state, apples are in abundance.
Weekends are spent by many at local farms indulging in a variety of hard ciders, apple and pumpkin picking. All while overlooking the picturesque Fall landscape of the multi-colored mountain ranges.
Which is why this time of year I tend to experiment by creating a new apple recipe. This year is a dessert and these Apple Pie Truffles were deliciously addicting!
This 5-ingredient recipe makes 22 truffles, requires no baking and can be ready with chilling time in about 90 minutes. ~Enjoy!

Ingredients Needed
For this recipe you're going to need the following ingredients:
Graham Cracker Crumbs: You can purchase boxed crumbs or finely crush whole graham crackers in a mini food processor.
Softened Cream Cheese: Any variety of cream cheese will work in this recipe.
Grated Fresh Apples: You can use any type of apples in this recipe.
Ground Cinnamon
White Chocolate Chips
Canola Oil (optional) A few drops may only be needed to help thin out the melted white chocolate.
How do you make Apple Pie Truffles?
Start by lining a baking sheet with parchment paper. Combine the graham cracker crumbs, cream cheese, grated apples and ground cinnamon in a bowl; mix well.
Using a 2-tablespoon cookie scoop, scoop out the dough and roll in your hands for form a ball; then place on sheet pan. Repeat for all; then place the sheet pan in the freezer for at least 1 hour.
Melt the white chocolate chips in a microwave cooker in the microwave on high in 10 second increments until the chocolate has melted. Do not overheat or the chocolate with thicken back up.
You can add a few drops of canola oil to help thin out the melted chocolate if necessary.
Remove the truffles from the freezer and working quickly, dip each ball into the melted white chocolate to coat on all sides; then place back on the sheet pan.
If you want, you can also add a little graham cracker crumb to the top of the truffles while the chocolate is still "wet". Repeat for all.
Storage
You can keep the apple pie truffles in an air tight container in the refrigerator for up to 5 days or in the freezer for up to 3 months.

These sound so good...curious though about the apples turning brown if kept several days in the fridge...
