I made this recipe for Roasted Garlic Mashed Cauliflower last week and posted it on my Facebook page. Everyone couldn't wait for me to post this recipe and I don't blame them, it was fantastic!

I love that this recipe so simple to prepare and if you're in a time crunch, I'm sure you could use frozen cauliflower instead of fresh.

Roasting garlic is SO easy, but it does take some time. If you are in a rush, consider roasting the garlic the night before, then just heat it up so the pulp extracts easier.

You can use roasted garlic in so many dishes, but my husband's favorite is to just smear it on top of a nice, juicy steak.

How do you roast garlic in the oven?

To roast the garlic, start by removing the excess papery skin off of a whole head of garlic, cut off the top head; then sprinkle some extra virgin olive oil and Kosher salt on top.

Wrap in aluminum foil or a garlic cooker and bake at 425 degrees F for approximately 30 minutes.

Roasted Garlic before

When done, the garlic will squeeze out of the skin like butter.

Roasted Garlic After

How do you make mashed cauliflower?

While the garlic is roasting, cut down the cauliflower into florets and steam over a double boiler.

Next, peel the potato and cut into 2" pieces. Place the potato into a small pot, fill with water and bring to a boil. Cook the potato until soft; approximately 15 minutes.

Combine the cauliflower, potato, roasted garlic, butter, and milk. Mash using an electric mixer until smooth; then season with Kosher salt and fresh ground black pepper.

We really liked this recipe for Roasted Garlic Mashed Cauliflower and my youngest, who refuses to eat cauliflower in any form, ate this and LOVED it!

The tricky mom that I am told her it was garlic potatoes and she fell for it. 😉 ~Enjoy!
