You all know by now pork chops are a weekly staple in our house. And just like chicken I try to find new ways to prepare them. One of my favorite cooking methods is to cook in a skillet on top of the stove.
It makes preparing dinner a breeze since the main meal can be ready in under 30 minutes; like these Pork Chops in a Bourbon Cream Sauce.

What is Pan Searing?
Pan searing is a cooking method in which the food; usually meat, beef, poultry, pork or seafood; is cooked at a high temperature until a browned crust forms. It helps to seal in the juices keeping the meat tender.
What is the best type of pan?
When pan searing a triple ply stainless steel or cast iron pan works best. My favorite pans are the Copper Core All Clad pans. They're durable, easy to clean and help cook foods at an even temperature.
Ingredients Needed
For this recipe you'll need:
- pork chops
- butter
- all purpose flour
- chicken broth
- bourbon
- heavy cream
- parsley
- Kosher salt
- black pepper
I chose to use bone-in pork chops that were approximately ½-inch thick, but you can use boneless chops too. I
f your pork chops are a little thicker, you may need to cook them a bit longer. The minimum internal temperature should be 145 degrees F.
How do you make Pan Seared Pork Chops in a Bourbon Cream Sauce?
Start by melting butter in a skillet over medium high heat; then add the pork chops and cook 3-4 minutes per side until a browned crust forms on each side.
Remove the pork chops from the pan and place on a plate while you make the bourbon sauce.
Add the flour to the pan, stir; then add the chicken broth and bourbon. Whisk until smooth; then add the heavy cream and parsley. Add the pork chops back into the pan; then season with salt and pepper.
Serving Suggestions
Cream sauces go well with rice or potato side dishes like Sour Cream & Chive Yukon Gold Mashed Potatoes or Spinach Risotto.

Pan Seared Pork Chops in a Bourbon Cream Sauce
Ingredients
- 4- ½-inch thick bone-in pork chops
- 2 tablespoons butter
- 2 tablespoons all purpose flour
- 1 cup chicken broth
- ¼ cup bourbon
- 3 tablespoons heavy cream
- 1 tablespoon chopped fresh parsley
- ¼ teaspoon kosher salt
- ⅛ teaspoon black pepper
