Chourico Nachos made with crispy lime tortilla chips topped with Portuguese chourico, black beans, tomatoes and a mixture of four cheeses.
If your craving a delicious new twist on classic nachos, look no further than these Chourico Nachos. Whether you're hosting a party or simply treating yourself to a special treat, these nachos are sure to be a hit.
Though nachos originated in Mexico, everyone has created their own unique twist by adding a variety of other ingredients; like the use of Portuguese chourico in this recipe.
Years ago I also experimented with an Italian version made with ground sweet sausage, olives and melted Asiago cheese. Also, fabulous!
This recipe can be ready in about 30 minutes and serves 10 people. ~Enjoy!

Ingredients Needed
Tortilla Chips: I liked the contrasting flavor of lime tortilla chips, but you can use any tortilla chip.
Extra Virgin Olive Oil
Portuguese Chourico: We prefer mild chourico, but make sure you remove the outer casing prior to cooking. Mexican or Spanish chorizo can also be substituted.
Minced Garlic
Black Beans: I used canned beans that have been rinsed under cold water and drained.
Rotel Fire Roasted Diced Tomatoes with Green Chilies
Shredded Mexican Four Cheese Blend: This variety includes cheddar, monterey jack, queso and aserdo cheeses. You can substitute any blend of cheese you prefer.
Gather and prepare all of the ingredients you'll need before making these chourico nachos!
Cook the Chourico
Before cooking the chourico, you'll need to remove the outer casing from the sausage. Once removed, diced the chourico into small pieces.
Add the oil to a nonstick skillet and heat over medium-high heat. Add the diced chourico and cook 3-4 minutes until its lightly browned; then add the garlic and cook for another minute.
If you prefer, you can remove any excess oil by placing the cooked chourico on a paper towel lined plate.
How do you make Chourico Nachos?
Preheat the oven to 425 degrees F. Spread the tortilla chips evenly on the sheet pan; then top with the black beans, diced tomatoes, chourico and shredded cheese.
Place the sheet pan in the oven and cook for 15 minutes until the cheese is melted, hot and bubbly. Serve alone or with some prepared pico de gallo or a bowl of sour cream.

- 1- (10-ounce) can rotel fire roasted diced tomatoes with green chilies
- 2 cups shredded mexican four cheese blend
