Greek Style Appetizer Skewers

Skewers made with English cucumbers, red onion, grape tomatoes, Kalamata olives and Feta cheese topped with a Greek vinaigrette make a delicious, healthy appetizer.

Think Greek Salad on a stick and you have a quick and easy appetizer that is gluten free, low carb and absolutely delicious!

They're simple to make, can be ready in about 20 minutes and perfect for lunch or snacking. ~Enjoy!

Ingredients Needed

To make this recipe you're going to need the following ingredients: 

For the Appetizer Skewers

English Cucumbers: We like to use these cucumbers because the skin is thinner, edible and gives these skewers a lovely green contrasting color.

Grape Tomatoes: Any tomato will work well, but using halved grape or cherry tomatoes makes it easier to eat. 

Red Onion: Any variety of onion can be substituted. 

Kalamata Olives

Crumbled Feta Cheese

Prepared Greek Vinaigrette

For the Vinaigrette

Extra Virgin Olive Oil

Lemon Juice

White Vinegar

Dried Oregano

Kosher Salt

Black Pepper

Prep the Vegetables

Gather all of your ingredients; then scrub the skins of the cucumber with a vegetable brush. Cut the cucumbers and onion into 1-inch pieces and cut the tomatoes in half. 

You'll also want to drain any liquid from the olives.

Make the Vinaigrette

Combine the oil, lemon juice, vinegar, oregano, salt and pepper in a small bowl; then whisk until smooth. 

Assemble the Skewers

Start by threading each skewer with a piece of cucumber, tomato, onion and olive and repeat until full. I was able to get three of each.

Place each completed skewer on a serving platter; then repeat for each skewer until all ingredients have been threaded and spread the crumbled Feta cheese on top. 

Drizzle the Greek vinaigrette on top of the skewers and serve immediately. 

If not serving immediately, cover the platter prior to adding the vinaigrette and keep refrigerated until ready to serve. You can prepare up to 1 day ahead before serving.

Ingredients
  

For the Appetizer Skewers

  • 1 english cucumber (36 one-inch pieces)
  • 18 grape tomatoes (halved)
  • 1 red onion (36 one-inch pieces)
  • 12 kalamata olives (you can add more throughout the skewer)
  • ¼ cup crumbled feta cheese
  • prepared greek vinaigrette

For the Greek Vinaigrette

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon white vinegar
  • 1 teaspoon dried oregano
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon black pepper

Instructions
 

  • Gather all of your ingredients; then scrub the skins of the cucumber with a vegetable brush. Cut the cucumbers and onion into 1-inch pieces and cut the tomatoes in half.

  • Place each completed skewer on a serving platter; then repeat for each skewer until all ingredients have been threaded and spread the crumbled Feta cheese on top.
  • Drizzle the Greek vinaigrette on top of the skewers and serve immediately.
  • If not serving immediately, cover the platter prior to adding the vinaigrette and keep refrigerated until ready to serve.
