Greek Chicken Roll Ups made with boneless chicken breasts that have been stuffed with Feta cheese, spinach and fresh oregano.
When I made these Greek Chicken Roll Ups for dinner last week, I wasn't trying to make them gluten free or Keto diet friendly, but they certainly fit the category.
I've been eating entirely too many carbs lately and with my wheat intolerance, my sinuses have been in overdrive. It's strange how I can eat things like bread and pasta in moderation and be alright.
Then the next time, I can't breathe due to nasal stuffiness and I start to breakout in acne. Weird right? I wanted to make a new quick and easy chicken recipe and these roll ups were delicious.
How do you make Greek Chicken Roll Ups?
For this recipe you'll need thin cut boneless chicken breasts, spinach, crumbled Feta cheese, fresh oregano and cooking spray. Preheat the oven to 375 degrees F; then spray the bottom of an oven safe dish with the cooking spray and gather your ingredients.
I used fresh spinach, but you can use defrosted, drained frozen spinach as well. If you like Kalamata olives, include those too!
Lay out the chicken breasts on a cutting board or flat clean surface; then top with the spinach, cheese and oregano.
Roll the chicken towards you, secure with a toothpick; then place in the dish. Season the top with salt and pepper; then spray the tops with the cooking spray and bake for 20 minutes or until the internal temperature of the chicken reads at least 165 degrees F and is no longer pink.
This recipe was super easy to make and was ready in about 25 minutes from start to finish. To round out your gluten free or Keto meal, serve with Greek Roasted Fingerling Potatoes and Heirloom Tomato Salad. ~Enjoy!

- 1 cup fresh spinach
- ¼ cup crumbled feta cheese
- 4 tablespoons fresh chopped oregano
- kosher salt
- black pepper
- cooking spray
Instructions
- Preheat oven to 375 degrees F.
