I think I've lost track on how many recipes I've made that use the caprese style combination of tomato, basil and Mozzarella cheese. Also, I'm sure I'm no where near done either because it's my FAVORITE flavor combination and these Caprese Stuffed Chicken Roll Ups were no exception.
Once again, I was looking for a new quick weeknight meal to make on this low carb eating initiative that my husband and I are on. Honestly, it really hasn't been that difficult and we generally feel better all around.
In fact, we recently went out to dinner to celebrate our anniversary at one of our favorite restaurants and over indulged.
By that I mean we ate all of the things we hadn't been eating like lavosh crackers, au gratin potatoes and I couldn't pass up one of my favorite desserts.
However, we did notice that even though we split the main entree and barely touched the shared side dishes and desserts, our appetites have diminished and we wound up taking home most of what we ordered for leftovers.
And because this blog shares the recipes that I'm making at home to feed my family, newer recipes will be geared more towards low carb options.
I promise I'll still throw in some decadent recipes every now and then as well...or if we give up--whichever comes first! ????
So for now, I'm going to share these Caprese Stuffed Chicken Roll Ups with you and even though they're low carb and gluten free, they're quick to make, not a lot of ingredients, and super delicious.
How do you make Caprese Stuffed Chicken Roll Ups?
For this recipe you'll need thin sliced boneless chicken breasts, sliced fresh Mozzarella cheese, sliced plum tomatoes, fresh basil leaves, aged balsamic vinegar and cooking spray (I used EVOO).
Grocery stores carry the chicken already sliced thin now; which I love. Yes, it is a bit more expensive this way so you can certainly purchase the chicken and cut it down yourself.
However, I know quite a few people that can not stand handling chicken at all so being able to purchase them already sliced is huge! Plus, it does save a little time.
First, preheat your oven to 425 degrees F; then spray a little cooking spray in the bottom of a 1qt. baking dish.
Assemble the chicken roll ups by first placing a slice of cheese on top of the chicken, then add the tomato slice and a whole basil leaf.
Roll up the chicken, secure with a toothpick and place seam side down in the baking dish. Repeat for all pieces of chicken.
Next, drizzle the vinegar on top of the chicken, season with Kosher salt and fresh ground black pepper; then bake for 25-30 minutes until the chicken is cooked through.
Minimum internal temperature 165 degrees F, but I prefer 180 degrees F. Remove from the oven, take out the toothpicks and serve.

Ingredients
- 6 Thin Sliced Chicken Breasts, boneless (approximately 18-ounces)
- 6 slices Fresh Mozzarella Cheese
- 6 slices Plum Tomato
- 6 Fresh Basil Leaves
- 2 tbsp. Aged Balsamic Vinegar
- Cooking Spray
- Kosher Salt & Black Pepper, to taste
- 6 Toothpicks
Instructions
