Caprese Chicken Meatloaf made with ground chicken, Mozzarella, basil, plum tomatoes and breadcrumbs is a healthy dinner that's loaded with flavor.
I must use this combination of flavors at least once a month in my meal planning because, in my opinion, you just can't go wrong. Caprese (pronounced kəˈprāzē) denotes a salad made from tomatoes, mozzarella and basil.
It can also be added to just about any seafood, pasta, salad, breakfast or meat recipe like I did with this Chicken Meatloaf.
I've mentioned before that our youngest daughter is a cheerleader and still in high school. During the season, each parent takes a turn to make dinner for all of the girls; especially on those nights where they go from the start of school (7:20am) to after school practice; then right to Friday night football games that last until 9-10pm.
There are also some dietary restrictions we have to follow for some of the girls and need to make sure that some of the items have no tree nuts, are vegetarian and gluten free.
We don't follow a gluten free diet at home, so when it was my turn to make something for the girls and needed breadcrumbs I purchased a container of the gluten free version.
It really doesn't taste that much different than the regular kind and since I had some leftover, I decided to use it in this Caprese Chicken Meatloaf.
How do you make Caprese Chicken Meatloaf?
For this recipe you'll need:
- ground chicken
- egg
- gluten free seasoned breadcrumbs (or regular breadcrumbs if you prefer)
- diced plum tomato
- fresh basil
- minced garlic
- diced fresh mozzarella cheese
Mix all of the ingredients together, shape into a rectangular form; then bake in a preheated 350 degree F oven until the meat is cooked through for about 1 hour.
That's it! Simple right? And this Caprese Chicken Meatloaf is super tasty too. I got six slices out of this meatloaf and served it with sea salt smashed potatoes and green beans with tomato and garlic. ~Enjoy!

Caprese Chicken Meatloaf
Ingredients
- 1 lb. ground chicken
- 1 lg. egg
- ½ c. gluten free breadcrumbs
- ½ c. diced plum tomatoes
- 2 tbsp. fresh chopped basil
- 4 oz. diced fresh mozzarella
- 1 clove garlic, minced
Instructions
- Preheat oven to 350 degrees F.
- Mix all of the ingredients together in a bowl, shape into a rectangular form; then bake until the meat is cooked through to an internal temperature of 180 degrees F (approx. 50-60 minutes)
