This simple to make Heirloom Tomato Salad made with fresh oregano and onion in a white vinaigrette is one of my favorite recipes.

Simple is always best and this recipe for Heirloom Tomato Salad is one of those that can be made in minutes. For those of you that don't know, I live in New Jersey. You can read more about me here, but as you all know NJ is the garden state. 

And along with every garden comes fresh fruits, vegetables and herbs.When in season, I prefer to use Heirloom tomatoes because they're so hearty, juicy and delicious.

They taste great right off the vine at room temperature; however, they are a bit more expensive because they're not mass produced.

They also have a shorter shelf life so you'll want to use them pretty quickly after purchasing. Since they're also fairly large in size, one or two of these beauties is all you need for a tasty salad.

How do you make Heirloom Tomato Salad?

For this recipe you'll need Heirloom tomatoes, red onion, fresh oregano, EVOO, white vinegar, Kosher salt and black pepper. If buying Heirloom tomatoes isn't possible due to availability or cost, you can use other tomatoes.

Start by cutting the tomatoes into wedges and place in a bowl; then add the remaining ingredients. Gently toss to coat; then refrigerate until ready to serve.

The entire recipe only takes about 10 minutes to prepare and personally, I prefer making it right before serving so you can eat it at room temperature. ~Enjoy!

Ingredients
  

  • 2 heirloom tomatoes
  • ½ red onion, thinly sliced
  • 2 tablespoons fresh oregano, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon white vinegar
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions
 

  • Cut the tomatoes into wedges and place in a bowl; then add the remaining ingredients. Gently toss to coat; then refrigerate until ready to serve.
