This Ranch Tomato Cucumber Salad is refreshing and makes the perfect last minute salad.
As a kid, my Mom would make a simple salad using tomatoes, cucumbers, mayonnaise, salt and pepper. I loved it, but haven’t made it myself in a really long time. I was looking to make a side dish with some grilled chicken the other day and decided to make a slightly different version and came up with this Ranch Tomato Cucumber Salad.
What I love most about this salad was that you only need a few ingredients: tomatoes, cucumbers, Ranch dressing, salt and pepper. It takes minutes to prepare and it’s so light and refreshing.
This Ranch Tomato Cucumber Salad makes a great last minute salad too; especially with the summer barbecue months coming up. I don’t know about you, but I’m always throwing last minute get togethers and if I can make a salad in about 10 minutes…even better! I prefer to use English cucumbers so I can leave the skin on them. Not only do they add a nice bright green color to the salad, but they also give it a little “crunch” next to the soft plum tomatoes. ~Enjoy!

Ranch Tomato Cucumber Salad
- 1 English Cucumber, skin washed, sliced
- 2-3 Plum Tomatoes, halved and sliced
- 1/4 c. Creamy Ranch Dressing
- Kosher Salt & Black Pepper, to taste
- Mix all ingredients together in a bowl. Chill until ready to serve.
