As a kid, my Mom would make a simple salad using tomatoes, cucumbers, mayonnaise, salt and pepper. I loved it, but haven't made it myself in a really long time.

I was looking to make a side dish with some grilled chicken the other day and decided to make a slightly different version and came up with this Ranch Tomato Cucumber Salad.

How do you make Ranch Tomato Cucumber Salad?

What I love most about this salad was that you only need a few ingredients: tomatoes, cucumbers, Ranch dressing, salt and pepper. It takes minutes to prepare and it's so light and refreshing.

This Ranch Tomato Cucumber Salad is refreshing and makes the perfect last minute salad.

This Ranch Tomato Cucumber Salad makes a great last minute salad too; especially with the summer barbecue months coming up. I don't know about you, but I'm always throwing last minute get togethers and if I can make a salad in about 10 minutes...even better!

I prefer to use English cucumbers so I can leave the skin on them. Not only do they add a nice bright green color to the salad, but they also give it a little "crunch" next to the soft plum tomatoes. ~Enjoy!

Ingredients
  

  • 1 english cucumber skin washed, sliced
  • 3 plum tomatoes, halved and sliced
  • ¼ cup creamy ranch dressing
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon black pepper

Instructions
 

  • Mix all ingredients together in a bowl. Chill until ready to serve.

    When I got home today, it was almost 100 degrees outside. We wanted something light for dinner. My husband grilled Country Style Ribs & I fixed this salad. Perfect summer meal. Thank you for sharing this recipe.

    I LOVE you this!! I wanted a bit more crunch so added a few stalks of celery and some fresh dill....My picky 4 and 6 year old girls ate it up and asked for seconds♥️
