Not only is baked oatmeal a convenient and tasty breakfast choice, it will leave you feeling satisfied and ready to take on the day ahead. 

This gluten free recipe serves 4 people and can be ready in under 1 hour. ~Enjoy!

Ingredients Needed

To make this baked oatmeal you're going to need the following ingredients: 

Old Fashioned Oats: Old fashioned oats are best for a chewier texture, but you can also use minute oats. 

Bananas

Chopped Walnuts

Milk: I used whole milk, but you can use any milk derivative (skim, 2%, half & half, etc) or non-milk products; though it may alter the consistency. 

Large Eggs

Vanilla Extract

Light Brown Sugar

Cooking Spray

Optional Garnishes: Powdered sugar, chopped walnuts, milk or cream, ground cinnamon

Gather and prep all of your ingredients before making this delicious baked oatmeal!

How do you make Banana Walnut Baked Oatmeal?

Start by preheating your oven to 375 degrees F; then spray a 1-quart baking dish with cooking spray.

Remove the skins from the bananas and smash them with the back of a fork on a small plate. 

Combine the milk, egg and vanilla extract in a bowl; then whisk until smooth. Add the brown sugar, oats, bananas and walnuts and stir with a spoon until combined. 

Add the mixture to the baking dish, place in the oven and cook for approximately 45 minutes or until the oatmeal is firm. 

Remove from the oven and serve hot. You can garnish with a little powdered sugar or more chopped walnuts. 

Store and Reheat

Once cooled you can cover store the oatmeal in an airtight container for up to 3 days in the refrigerator.

To reheat, remove your portion and place in a bowl; then heat in the microwave for 2 minutes. 

You may have to add a little more milk to thin out the mixture a bit depending on your liking.
