This Eggnog Baked Oatmeal made with five simple ingredients is perfect when feeding a crowd and a festive way to eat breakfast!
I've mentioned before that I'm not a huge fan of breakfast and usually opt for protein in the morning like these eggs. However, eggnog happens to be one of my favorite treats around the holidays and my husband loves oatmeal.
So I did the next best thing and combined the two to make this Eggnog Baked Oatmeal. I don't mind oatmeal, but it doesn't fill me up for long and I wind up eating more throughout the day.
This recipe was super flavorful and by making it in a larger quantity, we were able to enjoy breakfast for a few days. Plus, it allowed me to use up that holiday eggnog!
How do you make Eggnog Baked Oatmeal?
For this recipe you'll need eggnog, eggs, vanilla extract, granulated sugar and quick oats. Preheat oven to 375 degrees F; then spray an 8-inch x 8-inch baking dish with cooking spray.
Add the eggnog, eggs, vanilla and sugar to a bowl and whisk until blended; then fold in the oats using a spoon. Pour the mixture into the baking dish and bake for 45 minutes until firm.
Remove from the oven and serve hot. You can also sprinkle some nutmeg or confectioners sugar with a shaker on top before serving. This Eggnog Baked Oatmeal was delicious and was enough for eight servings.
My husband enjoyed it so much, I'll be making other varieties in the near future. I wish I would have made this before Christmas because it would have been perfect to make while the kids were opening gifts. ~Enjoy!

- 2 large eggs
- ½ tablespoon vanilla extract

- 2 cups quick oats

- confectioners sugar (optional garnish)

I waited too long after the holiday's to try this and no more eggnog in the stores, darn it!! Would I be able to substitute chocolate milk for the eggnog?

I've never tried it but it sounds good! Chocolate milk is much thinner than eggnog though so I'm not sure how much you would use in this recipe.
