Apple Cinnamon Baked Oatmeal made with McIntosh apples, oats, brown sugar and pecans is a tasty way to start your day.
Breakfast for me consists of one of two things: eggs or oatmeal. I prefer to save my recipe experimentation to dinner meals and will eat the same breakfast for days. Whereas dinner, I don't care for leftovers.
That is unless you turn it into another new recipe. But to heat up the same meal twice in a row; well besides eggplant parmesan; I usually will opt for something else.
Since my injury in April, I wasn't able to cook for myself and my husband made all of my meals. Every morning for weeks it was the same thing; "Do you want oatmeal or scrambled eggs?". That seemed to be the only thing I could tolerate in my stomach being on so much medication.
Even with oatmeal, I only like it plain with a little honey or apple cinnamon instant oatmeal. I know, it's pretty boring right? So when I was finally able to get around a little better and make some new recipes, I turned to one of my favorite flavor combinations and made this Apple Cinnamon Baked Oatmeal.
Ingredients Needed
For this recipe you'll need quick oats, chopped apples, an egg, vanilla extract, light brown sugar, ground cinnamon, pecans and oat milk.
You'll need 1-cup of thinly sliced apples; which is approximately two McIntosh apples peeled, cored and diced.
What are some substitutions?
Our girls are on a gluten-free, dairy-free kick lately and have been making smoothies with oat or almond milk. Since I don't drink cow's milk; unless in cooking, I used oat milk in this recipe. However, you can use any types of the following liquid in this recipe including:
- Nut Milks (Almond, Cashew, Peanut, etc)
- Soy Milk
- Apple Cider or Juice
- Rice Milk
- Coconut Milk
Don't like pecans? You can substitute walnuts or leave them out altogether! There may be slight flavor differences with the liquid you choose as the oatmeal will take on that flavor.
How do you make Apple Cinnamon Baked Oatmeal?
Start by preheating the oven to 375 degrees F. Add the oat milk, egg and vanilla to a medium bowl and whisk until smooth. Next, peel, core and thinly slice the apples into thin pieces.
Add the apples to the bowl along with the cinnamon, brown sugar, oats and pecans; mix well. Spray a 2-quart oven safe baking dish with cooking spray and add the oatmeal mixture.
Place the dish in the oven and cook for 40-45 minutes until the oatmeal has cooked, puffed up and the inside isn't "wet" when you stick a toothpick inside at the center.
Serving Suggestions
Serve this Apple Cinnamon Baked Oatmeal as is or sprinkle with an additional garnish like confectioners sugar, cinnamon or chopped pecans.
This recipe is enough for four; which is great to feed everyone at the same time. Plus, my family loved it! You can refrigerate what you don't eat and it will last up to 3 days when covered. I'll definitely be making this recipe again. ~Enjoy!

Can I use old fashioned oats instead of quick oats?

I haven't tried it, so I'm not sure if it will come out the same. The oatmeal may be a bit "chewier" with regular oats.
