I've seen so many recipes for tater tot casseroles on Pinterest lately and decided to hop on the bandwagon. After all, who wouldn't want to make an easy breakfast recipe when feeding a crowd?
What are Tater Tots?
Tater tots are made from grated potatoes that have been deep fried. They are cylindrical in shape and are crispy when fried. Or-Ida trademarked the name back in 1956 and these little gems are a favorite American side dish; especially amongst kids since they're bite sized and fun!
They even make mini tots as well; which is what I used in this recipe.
When my girls were younger, they used to LOVE tater tots. I didn't make them very often because if I was going to make a "fried potato" side dish, I'd make homemade french fries instead. We do however like to have hash browns or chorizo and potatoes with our Sunday morning "big breakfast" as we like to call it.
That's when I'll make eggs, bacon or sausage, with some sort of potato and fruit for breakfast. It fills up so much we're usually good until dinner! So one weekend I decided to make this Tater Tot Breakfast Casserole; which has all of the usual ingredients all in one.
How do you make Tater Tot Breakfast Casserole?
For this recipe you'll need eggs, milk, shredded Cheddar cheese, cooked bacon and mini tater tots. You could also use the regular size tots or the crowns if you'd like.
Start by preheating your oven to 375 degrees F; then cook the bacon either in the microwave, oven or in your skillet until crispy. Place the cooked bacon on paper towels to remove any excess grease; then crumble and set aside once cooled.
While the bacon is cooking, add the eggs to a small bowl along with the milk and whisk until blended. Spray a 1-quart oven safe baking dish with cooking spray; then add the potatoes to the bottom of the dish. Pour the scrambled eggs over the potatoes; then top with the crumbled bacon and shredded cheese.
Place the dish in the oven and cook for 30-35 minutes until the eggs are no longer liquidy. If you'd like, you can garnish with chopped scallions; then serve hot.
This Tater Tot Breakfast Casserole serves four people so if you're feeding a larger crowd, you can double or triple the recipe by changing the number of servings in the recipe card below.
