This Tiramisu Breakfast Casserole made with coffee, eggs and cubed Italian bread makes a tasty breakfast for two.
Often, people make a breakfast casserole recipe when they're feeding a crowd. I say why wait! Aren't you special enough to enjoy it too? Of course you are!
That's why I wanted to make a new recipe to enjoy for just the two of you and came up with this Tiramisu Breakfast Casserole.
What is Tiramisu?
Tiramisu is a coffee flavored Italian dessert made with ladyfingers that have been dipped in coffee; then layered with a mixture of eggs, sugar, mascarpone cheese and cocoa powder.
Though this recipe doesn't contain any cocoa, you can certainly sprinkle some on top before serving instead of using confectioner's sugar.
What is a Tiramisu breakfast casserole?
A Tiramisu breakfast casserole is similar to french toast casserole, but the bread is diced into cubes instead of leaving whole slices. The eggs help bind all of the ingredients together for a tasty breakfast.
It's also similar to a strata like this recipe for caprese breakfast strata or spinach artichoke breakfast strata.
How do you make Tiramisu Breakfast Casserole?
For this recipe you'll need eggs, heavy cream, brewed coffee, vanilla extract, light brown sugar, ground cinnamon, day old Italian bread and cooking spray. If you'd like to garnish the top, you can use cocoa powder or confectioners sugar.
You can use regular brewed coffee or instant coffee; however, make sure it has cooled to be at least room temperature. Spray a 1-quart oven safe baking dish with cooking spray.
In a large bowl add the eggs, coffee, and vanilla extract, whisk until smooth; then add the sugar and cinnamon and mix well. Cut the Italian bread into bite sized cubes; then add it to the egg mixture.
Mix together with a spoon until the bread is coated, place in the baking dish; then wrap tightly and refrigerate overnight. When you're ready to cook, bring the casserole to room temperature for about 10 minutes while you're preheating the oven to 350 degrees F.
Cook for approximately 20 minutes until the egg is cooked through; then remove from the oven, garnish as desired and serve hot with warm maple syrup.
Though I'm not much of a carb breakfast eater, I do have to say this Tiramisu Breakfast Casserole recipe was super tasty and so easy to make. My husband LOVED it so I'll definitely be making this again. It would be perfect for Mother's Day or Sunday brunch. ~Enjoy!

- 1 teaspoon vanilla extract
- 2 tablespoons light brown sugar
- 1 teaspoon ground cinnamon
- 4 cups cubed day old Italian bread
- cooking spray
- cocoa powder or confectioners sugar (optional garnish)
