Ranch Zucchini Boats are stuffed with chopped fresh zucchini, garlic, Ranch seasoning, olive oiil and shredded Mozzarella cheese.
My family loves stuffed zucchini boats and this version made with a Ranch seasoning packet is one of my new personal favorites. There are a few seasoning packets I always keep on hand in my pantry for those last minute recipe ideas.
Taco seasoning mix, Knorr vegetable mix and Ranch Dip/Dressing mix. They're great to use in a pinch when you're not sure what to make, but are looking for a lot of flavor.
I had some zucchini that I wanted to use up, but didn't have all of the ingredients to make my regular Stuffed Zucchini Boats, so Ranch Zucchini Boats it was!
What can you make with seasoning packets?
- Taco Seasoning Packets can be used in recipes like this Taco Baked Sweet Potato Casserole, Slow Cooker Taco Beef or Taco Baked Chicken
- Knorr Vegetable Mix can be used not only in dips with sour cream, but taste great added to ground beef like this Vegetable Meatloaf.
- As for the Ranch Mix, I've made several recipes including Bacon Ranch Potato Salad, Cheddar Ranch Meatballs and Crispy Ranch Baked Chicken Thighs to name a few.
How do you make Ranch Zucchini Boats?
For this recipe you'll need zucchini, garlic, olive oil, Ranch Dressing/Dip package and shredded Mozzarella cheese. Wash the outer skin of the zucchini by gently scrubbing with a vegetable brush to remove any excess dirt.
Trim the ends off of the zucchini; then cut each one in half vertically forming four boats. Scrape out the inside flesh using a small knife or a kitchen teaspoon; leaving ¼-inch zucchini shell.
Not only does leaving the skin on the zucchini allow the stuffing to hold up better, it's also loaded with extra nutrients. Chop the inside zucchini flesh into small pieces; then add to a bowl along with the Ranch package, garlic, EVOO and half of the cheese.
You can season with additional salt and pepper if you wish, but these packets generally have enough sodium and it's tangy already so I didn't add anything extra.
Mix well; then add the mixture back into the zucchini shells and top with remaining cheese and place them into an oven safe baking dish.
Bake in a preheated 350 degree F oven for 25-30 minutes until the cheese has melted and the zucchini is soft and cooked through.

Ingredients

- 1 tablespoon minced garlic
- 1- (1-ounce)package Hidden Valley Ranch Dip Mix
- 2 tablespoons Extra Virgin Olive Oil
- ¼ cup shredded Mozzarella cheese; divided

- Preheat oven to 350 degrees F.
