I was running around like a mad woman last week trying to pick up my daughter from cheer camp, bring her home, make dinner; then bring her back again to coach the younger squads 2 hours later.

It was all timed perfectly to allow myself enough time to come home and make dinner. But, wouldn't you know it, her practice ran almost 20 minutes later than expected.

So there I sat in the school parking lot waiting for her to come out, when I mentally started thinking about what I was going to make with the ground beef I had taken out for dinner that morning.

Then I remembered that each time I had purchased a Hellmann's mayonnaise this summer, they had a Knorr Vegetable Recipe Mix attached to it. Don't you just love cross promotions!

I hadn't made a meatloaf in a while and figured I'd just throw in this dry mix. If you don't recognize it by the name, it's the one you use to make that spinach dip in the pumpernickel bread bowl that was popular back in the 80's.

What is in the Knorr Vegetable Mix?

I don't use a lot of packaged products, but this one I keep on hand for any last minute entertaining when a dip is needed. It contains carrots, onions, tomatoes, leeks, cabbage, peas and spices.

How do you make Vegetable Meatloaf?

For this recipe you'll need lean ground beef, Knorr Vegetable Recipe Mix, eggs and Panko breadcrumbs. You can also substitute ground chicken or turkey for the beef. 

Combine all of the ingredients in a bowl, mix well; then shape into a rectangle. Place in an oven safe baking dish and bake at 425 degree F for 30-40 minutes or until internal temperature reaches 165 degrees F.

When it's done, cut into six slices and serve with creamy mashed potatoes and your favorite vegetable. 

I couldn't believe how easy, quick and tasty this Vegetable Meatloaf was and the family loved it! Since it was so easy to throw together and I cooked it at a higher temperature, luckily we made it there on time.

FYI. I hate to be late to anything; it's one of my biggest pet peeves. ~Enjoy!

  • 1 pound lean ground beef (sub: ground chicken or turkey)
  • 1- (1.4-ounce) package Knorr Vegetable Recipe Mix
  • 2 large eggs
  • ½ cup Panko breadcrumbs

Instructions
