This meatloaf made with lean ground beef, shredded Cheddar cheese, and Panko breadcrumbs is super cheesy, moist and delicious!

If you're looking for simple weeknight meals that the whole family will love, this Cheesy Meatloaf is it! This recipe first came about when I was making hamburgers last Summer.

Most of the time, we just use ground beef and form them into patties before grilling. However, since I prefer my burgers more on the well done side they tend to dry out.

That is until one day I decided to add some shredded cheese to them. The burgers were SUPER moist and fully cooked, just the way I like them.

So I decided to try it out in meatloaf form a few weeks ago and man was it good! I wasn't quite sure what to call it, but Cheesy Meatloaf sounded like as good a name as any.

How do you make Cheesy Meatloaf?

For this recipe you'll need lean ground beef, shredded Cheddar cheese, eggs, Panko breadcrumbs, scallions, Kosher salt and pepper. I chose to use ground beef, but you can also use ground chicken or turkey. 

You can also use gluten free or any other unseasoned breadcrumbs. Start by preheating the oven to 375 degrees F. Add all of the ingredients to a bowl, reserving ¼ cup of the cheese to put on the top.

Mix well, then form into a rectangular loaf and place in an oven safe baking dish or loaf pan. Bake for approximately 40-45 minutes; then sprinkle the remaining cheese on top.

Place the meatloaf back in the oven for another 10-15 minutes until the meatloaf is cooked through and the cheese has melted. Cooking times may vary slightly depending on your preference.

When cooking meatloaf, I prefer mine to be well done and cooked thoroughly throughout.

If you like yours with a little pink inside, check the internal temperature at the 30 minute mark and adjust cooking times from there. Just remember all ground beef should be cooked to a minimum internal temperature of 160 degrees F. 

Cheesy Meatloaf is basically a cheeseburger in meatloaf form and was so easy to make. You can even make the mixture into meatballs and bake them in the oven. I guarantee the kids will LOVE them!

To round out our meal we served our meatloaf with Loaded Mashed Potato Gratin, Sea Salt Roasted Green Beans and Sour Cream and Chive Drop Biscuits~Enjoy!

  • 1 ½ pounds lean ground beef
  • 8 ounces shredded cheddar cheese, divided
  • 2 large eggs
  • ½ cup panko breadcrumbs
  • ¼ cup chopped scallions
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon black pepper
