BBQ Cheddar Chicken Meatloaf made with extra lean ground chicken, your favorite bbq sauce, shredded cheddar cheese and gluten free breadcrumbs.
I hate to throw anything food related away; especially when I can usually utilize it to make other new recipes.
Because our grilling season is coming to an end, I had some leftover bbq sauce and decided to use it to make this BBQ Cheddar Chicken Meatloaf for dinner.
This recipe is super simple to make; which makes it even better now that school and our hectic schedules are back in full swing.
Our oldest is home from college taking her last 3 credits at a local school to graduate and walk in December from Penn State University; as well as working full time and taking her NASM certification to become a Personal Trainer before applying to grad schools next Fall.
Our youngest started her junior year of high school and is taking a full course load while participating in cheerleading and PALS; a peer support group to help incoming high school students.
She also volunteers as a peer minister for our local church to help other students prepare for the sacrament of confirmation, is on the varsity club and getting ready to take her driving test in 3 months. We are so proud of both girls for working so hard to reach their goals!
Needless to say we are BUSY, BUSY, BUSY and meals like this BBQ Cheddar Chicken Meatloaf make dinnertime easy.
Plus, meatloaf reheats well so I can make this in the late afternoon and everyone can reheat it for dinner when it's convenient for them since our schedules don't always coincide.
How do you make BBQ Cheddar Chicken Meatloaf?
To make this recipe you'll need ground chicken (you can also use ground turkey or beef), egg, scallions, your favorite bbq sauce, shredded cheddar cheese and breadcrumbs.
Preheat your oven to 375 degrees F; then combine all ingredients in a bowl--only using half of the cheese--and mix well.
Shape your meatloaf into a rectangular shape and place it in an oven safe baking dish; then top with the remaining cheese.
Bake for 45-50 minutes or until the internal temperature is 180 degrees F. My family really liked this BBQ Cheddar Chicken Meatloaf and it made six slices. ~Enjoy!

Delicious! I used honey BBQ sauce and grated about 1/4 of a small onion instead of the scallion. Actually liked it better than a beef meatloaf. This will go into our regular rotation. Thanks!
