What can you say about meatloaf? It certainly  has been a food staple in the home for many, many years and was originally created as a way to stretch the food budget by using inexpensive meat and fillers. There are so many different variations of meatloaf and this Balsamic Meatloaf is simple to make and very flavorful!

Balsamic Meatloaf

Recipes using ground beef make it easy to get dinner on the table much faster during the week. For this recipe I used lean ground beef, onion, garlic, fresh thyme, eggs, aged balsamic vinegar, Pecorino Romano cheese and Panko breadcrumbs. Simply mix it all together, pop it into the oven for about an hour and dinner is ready.  This Balsamic Meatloaf was delicious and my family really enjoyed it. Serve with mashed potatoes and a vegetable for a complete meal idea. ~Enjoy!

Ingredients
  • 1 1/2 lb. Extra Lean Ground Beef (90/10)
  • 1/4 c. Red Onion, minced
  • 1 Clove Garlic, minced
  • 1 tbsp. Fresh Thyme
  • 2 Large Eggs
  • 1/4 c. Aged Balsamic Vinegar
  • 1/4 c. Grated Pecorino Romano Cheese
  • 1 c. Panko Breadcrumbs
Instructions
  1. Preheat oven to 350 degrees F. 

  2. Combine all of the ingredients in a bowl and mix well. Shape into a rectangle; then place in an oven-safe baking dish.

  3. Bake for 50-60 minutes or until proper internal temperature is reached.

* You can substitute ground turkey or chicken for the beef.

    Say… what?!?! Balsamic meatloaf? This sounds awesome! And I love the fact that this meatloaf doesn’t contain ketchup (which I hate). lol.
