Zucchini tossed with shallots, lime juice and olive oil; then roasted make a deliciously light and delicious vegetable side dish.
I first made this recipe for Lime Roasted Zucchini and Shallots back in 2012. Years later it's still just as delicious! Zucchini is in prime season and it's one of my favorite vegetables. So much in fact, I usually make it weekly in our dinner rotation.

How do you make Lime Roasted Zucchini and Shallots?
For this recipe you'll need zucchini, shallots, lime zest and juice, EVOO, Kosher salt, and black pepper. Start by preheating the oven to 425 degrees F.
Wash the zucchini with a vegetable brush under lukewarm water to remove any excess dirt; then cut the ends off of each side. Next, cut the zucchini in half lengthwise. Cut each half of the zucchini into ½-inch thick slices; then add to a medium bowl.
Dice the shallots and add them to the bowl along with the lime zest and juice, oil, salt, pepper; mix well. Place on a baking sheet and roast for 15-20 minutes; turning halfway.
Adding lime juice gives this vegetable side dish a little citrusy zing. These Lime Roasted Zucchini and Shallots would go wonderfully with Grilled Chicken in a Lime Sea Salt Brine, Cajun Lime Grilled Rib Eye Steak or Coconut and Lime Breaded Pork Cutlets. ~Enjoy!
