January is National Soup Month and it couldn't have come at a better time. Here in NJ we've been experiencing extremely frigid temperatures and soup like this homemade Minestrone will certainly warm your soul on a cold day. 

What is Minestrone?

Minestrone is a thick, Italian soup made up of vegetables, rice or pasta, beans and stock. In my version, I opted for Organic vegetable stock, but you can substitute chicken stock if you prefer.

How do you make Minestrone Soup?

For this recipe you'll need EVOO, zucchini, yellow squash, garlic, rosemary, tomatoes, vegetable broth, cannellini beans, Ditalini pasta and grated Pecorino Romano cheese. 

Start by heating the oil in a pot over medium heat; then add the zucchini, yellow squash, garlic, rosemary and tomatoes.

SautƩ 2-3 minutes until the squash starts to soften; then add the vegetable broth, water and beans. Simmer on low for 30 minutes.

This hearty Minestrone Soup made with squash, tomatoes, pasta, garlic and Ditalini pasta is so filling, you can eat it for dinner.

Add the pasta and increase heat to medium-high and cook for an additional 10-15 minutes. Add the cheese when the pasta has softened.

This Minestrone Soup is low in saturated fat and high in fiber, iron and vitamins B6 and C. It's also a deliciously filling, heart healthy soup that can be served as a complete meal as is or pair it with a tossed salad or crusty Italian bread. ~Enjoy!

Ingredients
  

  • 1 tbsp. Extra Virgin Olive Oil
  • 1 small Zucchini, quartered and sliced ½" thick
  • 1 small Yellow Squash, quartered and sliced ½" thick
  • 2 cloves Garlic, minced
  • 1 tbsp. Fresh Rosemary, chopped
  • 2 Roma Tomatoes, diced
  • 4 c. Vegetable Broth
  • 2 c. Water
  • 1- 15(ounce) can Cannellini Beans, rinsed under cool water
  • ½ c. Dry Ditalini Pasta
  • ¼ c. Pecorino Romano Cheese, grated

Instructions
 

  • In a large pot, heat oil over medium heat and add zucchini, yellow squash, garlic, rosemary and tomatoes.
  • Saute 2-3 minutes until the squash starts to soften; then add the vegetable broth, water and beans.Ā Simmer on low for 30 minutes.
