If you love green beans as much as I do, you're always looking for a new way to make them; well at least I am. So when I recently made those Teriyaki Grilled Pork Chops for dinner, I decided to give my vegetable a little Asian flair and came up with this quick and easy recipe for Sesame Ginger Sautéed Haricot Verts.

What are Haricot Verts?

Haricot Verts. Green Beans. Technically they are the same thing as the word 'green bean' in French is pronounced 'haricot vert', but there are a couple of differences.

Haricot verts are skinnier and a little more tender and flavorful than the traditional green bean, not to mention more expensive; which is why I generally only purchase them when they're on sale.

How do you make Sesame Ginger Haricot Verts?

For this recipe I blanched the beans over a double boiler for 2-3 minutes; just long enough for them to soften a bit and turn bright green. You don't want the beans to get mushy. For those of you new to cooking, a double boiler is a combination of a pot and a perforated pot insert, similar to the All-Clad one shown below.

Your vegetables go in the perforated pot, water goes in the bottom pot and when combined and covered with a lid, it steams your vegetables. I just love mine and steam all of my fresh vegetables in one of these.

After you steam your vegetables, remove from the heat making sure you drain the water. Next, melt the butter in a large saute pan over medium-high heat; then add the garlic, fresh ginger, soy sauce and sesame seeds. You only want to stir it for about 1 minute to form a sauce.

Finally, add your haricot verts and saute for about 2 minutes; coating the beans with the buttery soy sauce mixture; then serve. You can also sprinkle more sesame seeds on top if you'd like for presentation purposes.

Ingredients
  

  • 1 lb. Haricot Verts (or green beans)
  • 1 Clove Garlic, minced
  • 1 tsp. Grated Fresh Ginger
  • 1 tbsp. Butter
  • 1 tbsp. Soy Sauce
  • 2 tsp. Sesame Seeds

Instructions
 

  • Steam the haricot verts over a double boiler for 2-3 minutes; then remove from heat.
  • In a large saute pan, melt butter; then add the garlic, ginger, soy sauce and sesame seeds. Stir for 1 minute; then add the beans. Saute for an additional 2-3 minutes, remove from pan and serve.
