Chicken thighs are so versatile for easy weeknight dinners and this version baked in a marinade of apple cider and Dijon mustard is super tasty.

I know some people have mixed feelings about chicken thighs; however, my family loves them. In fact, I even published a compilation of 20 Deliciously Easy Chicken Thigh Recipes because we eat them for dinner at least once a week. 

With Fall on the horizon, we'll soon be over indulging in apple cider. My kids just can't get enough of it! So I wanted to create a new easy recipe using a few simple ingredients and made these Apple Cider Oven Baked Chicken Thighs. 

I've made several recipes using apple cider like these Fritters, Whole Roasted Chicken with Pan Gravy and Cranberry Sauce and it really adds a nice flavor to any recipe. 

Apple Cider Mustard Baked Chicken Thighs

How long does it take to bake chicken thighs?

If I had to pick one way to cook chicken thighs, it would definitely be to bake them in the oven. In general, bone-in, skin on chicken thighs take about one hour to cook in a 350 degree F oven.

This works out well on busy weeknights because I can pop them into the oven; then have an hour to unwind from my day, catch up with my family and make the sides I'll be serving that night with dinner.

How do you make Apple Cider Mustard Chicken Thighs?

To make this recipe, you'll need bone-in, skin on chicken thighs, EVOO, scallions, apple cider, Dijon mustard and parsley. First, place your chicken thighs in an oven safe baking dish skin side up.

In a small bowl, combine the remaining ingredients and whisk until smooth; then brush on top of the chicken.

Finally, place the dish into your preheated oven and bake for 1 hour or until the internal temperature reaches 165 degrees F; however I prefer mine at 180 degrees.

Simple right? My family really liked this recipe and the combination of sweet cider mixed with a slight tang from the mustard was delicious! ~Enjoy!

Ingredients
  

  • 6 bone-in, skin on chicken thighs
  • ½ cup apple cider
  • ¼ cup dijon mustard
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon chopped fresh parsley (or ½ tablespoon dried parsley)

Instructions
 

  • Preheat oven to 350 degrees F; then place your chicken thighs in an oven safe baking dish skin side up.
  • In a small bowl, combine the remaining ingredients and whisk until smooth; then brush on top of the chicken.
  • Place in the oven and bake for 1 hour or until the minimum internal temperature is 165 degrees F. (I prefer mine at 180 degrees F).
