Black Bean and Strawberry Salad in a rosemary lime vinaigrette is super easy, healthy salad with a ton of flavor.
I don't know what I was thinking when I recently went shopping at BJ's Wholesale and purchased a case of black beans. Really, I only needed two cans, but those types of shopping stores only carry bulk items.
I figured I'd use them up eventually as they have a longer shelf life and decided to make this Black Bean and Strawberry Salad.
How do you make Black Bean and Strawberry Salad?
For this recipe you'll need black beans, strawberries, scallions, lime juice, fresh rosemary, agave syrup, Canola oil, Kosher salt and black pepper. Add all ingredients to a bowl and mix well; then refrigerate until ready to serve.
Not only was this Black Bean and Strawberry Salad healthy and filling, it was so flavorful with the combination of fresh lime mixed with the sweetness of the berries and agave syrup and woodsy flavor of the rosemary.

Black Bean and Strawberry Salad
Ingredients
- 1- (15-ounce) can black beans, rinsed and drained
- 1 pint fresh strawberries washed, hulled and sliced
- 1 scallion,
- 1 tablespoons finely chopped fresh rosemary
- 2 tablespoons lime juice
- 2 tablespoons agave syrup
- 3 tablespoons Canola oil
Instructions
- Add all ingredients to a bowl and mix well. Refrigerate until ready to serve.
