Like so many kids, mine used to LOVE tater tots. But as they got older and experimented with new food, they realized that they could be eating a little healthier.

Veggie tots like these made with broccoli are simple to make and tot-ally delicious. Get the pun there?

These tots are baked, not fried, yield 30 and can be ready in 30 minutes from start to finish.

I haven't tried this recipe in an air fryer so I'm not sure how long it would take; however, I'm sure it would work in there as well.

Equipment

  • Sheet Pan
  • Parchment Paper
  • Medium Bowl
  • 1 Tablespoon Cookie Scoop

Tots with broccoli

Ingredients Needed

For this recipe you'll need the following ingredients:

Defrosted Riced Frozen Broccoli: For ease, I used already riced broccoli. However, you can use fresh steamed broccoli; then place it in a food processor and pulse until its riced or chopped in small pieces.

Shredded Mozzarella Cheese

Italian Flavored Breadcrumbs

Eggs

Cooking Spray

One broccoli tot in marinara sauce

How do you make Broccoli Tots?

Line a sheet pan with parchment paper; then preheat the oven to 425 degrees F. Combine the riced broccoli, cheese, breadcrumbs and eggs in a medium bowl and mix together.

Portion out 1 tablespoon of the mixture using a cookie scoop, place on the sheet pan and gently form a rectangle shape to form a tot. Repeat for all.

Spray the tops with cooking spray; then cook for 15 minutes until light brown and crispy on the outside. You can serve by themselves or with a marinara sauce for dipping.
