Ingredients Needed

To make these sweet potato wedges, you're going to need the following ingredients: 

Fresh Sweet Potatoes

Chili Powder

Garlic Powder

Cumin

Lime Zest

Kosher Salt

Extra Virgin Olive Oil

Prepare the Sweet Potatoes

Peel the sweet potato skins using a vegetable peeler; then rinse off under cool water and pat dry.

Using a sharp knife, cut the potato in half lengthwise; then cut each half into 3 wedges. You'll get 6 wedges per sweet potato.

Add the potato wedges to a mixing bowl and set aside.

the Marinade

In a small bowl, combine the chili powder, garlic powder, cumin, lime zest, salt and oil; then whisk until smooth. 

Roast the Sweet Potatoes

Preheat the oven to 425 degrees F. Pour the marinade over the sweet potato wedges and toss to coat. Place the wedges in a small roasting pan and cook for 20-25 minutes until the edges are crispy and the potatoes are soft on the inside. 

Serving Suggestions

You can serve these Chili Lime Roasted Sweet Potato Wedges as a side dish with  Grilled Cajun Lime Shrimp Skewers, Chili Lime Roasted Cornish Hens or Cajun Lime Grilled Rib Eye Steak. Or serve as a snack with an aioli or a dipping sauce.

  • 2 large sweet potatoes
  • 1 teaspoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon cumin
  • 1 lime (zest only)
  • 2 tablespoons extra virgin olive oil

Instructions
 

  • Preheat the oven to 425 degrees F.
