Grilled Cajun Lime Shrimp Skewers

Shrimp skewers seasoned with cajun seasoning and your favorite vegetables; then grilled and topped with fresh lime juice.

My family loves shrimp and even though I don't like seafood, I try to make it for them at least once per month.

Get your grills ready because these grilled shrimp skewers are super simple and makes a tasty last minute, healthy, quick meal. 

This recipe makes four skewers, serves 2 people, is gluten and dairy free and low carb/Keto diet friendly. 

Skewers

You can use metal or wooden skewers. If using wooden skewers, make sure you soak them in water for at least 30 minutes prior to threading the shrimp and vegetables. This will help the skewers to not burn when grilling on an outdoor grill.

Ingredients Needed

Shrimp: You're going to want to use raw, cleaned and deveined shrimp that is at least extra large in size. Smaller shrimp will shrink up too much once cooked. 

Vegetables: You can use any variety of vegetables you like. Some examples include grape tomatoes, zucchini, peppers, onions or mushrooms. You'll want to make them a large dice so that they cook evenly with the shrimp.

How do you make Cajun Shrimp Skewers?

Thread the shrimp and cut vegetables onto four soaked wooden skewers, allowing four pieces of shrimp on each skewer.

When you are ready to cook, heat the grill to medium-high heat. Sprinkle the cajun seasoning over the shrimp and place on the hot grill.

Grill 3-5 minutes until pink and just cooked through, turning every few minutes so that they don't burn. Remove from the heat; then squeeze fresh lime juice on top of the skewers and serve. 

Serving Suggestions

Because of the spicy-citrusy combination of flavors you can pair these skewers with Mexican-Inspired Cilantro Lime Rice, Quinoa and Black Bean Salad or Grilled Sweet Potato Wedges.
