Garlic Roasted Cauliflower

One of my favorite vegetables is roasted cauliflower with garlic. It's super easy to make and the combination of flavors goes well with so many meals. 

In fact, I can't believe I've never shared it here on the blog before as this is one of those recipes I  make at least three times a month! 

Roasting vegetables like fresh cauliflower adds a caramelized, nutty flavor. This cauliflower with garlic serves four and can be ready in about 30 minutes. It's also gluten free, dairy free, and low carb-Keto diet friendly. 

Suggested  Equipment

  • Cutting Board
  • Knife
  • Colander
  • Mixing Bowl
  • Mixing Spoon
  • Sheet Pan (roasting pan or any oven safe dish)

Ingredients Needed

Fresh Cauliflower: You'll need a whole head of cauliflower cut down into florets. When roasting, it's best to use fresh vs. frozen. 

Fresh Garlic: I like to use thin slivers of fresh garlic so you can get some in every bite!

Extra Virgin Olive Oil

Kosher Salt

Black Pepper

How to Cut a Whole Cauliflower Into Florets

Cutting a whole head of cauliflower into florets is pretty simple if you follow these steps. 

  1. Cut the cauliflower in half vertically down the center with a knife
  2. Take the knife and cut out the center core like a triangle. 
  3. Break apart the pieces and trim any extra stems as necessary and place in a colander
  4. Rinse the florets under cold water; then drain on a dish towel to remove excess water.

How do you make Garlic Roasted Cauliflower?

Preheat the oven to 425 degrees F. Trim the whole cauliflower into florets, rinse, drain; then add to a mixing bowl. Peel and cut the fresh garlic into thin slices; then add it to the bowl along with the oil, salt and pepper. 

Mix well; then place on a sheet pan and roast in the oven for 25-30 minutes or until the cauliflower is fork tender and golden brown. 

What to serve with Roasted Cauliflower?

Because of it's mild flavor, garlic roasted cauliflower can go with so many main meals. Some of our favorites are Whole Roasted Chicken Oreganata, Honey Roasted Garlic Pork Chops or Tuscan-Style Grilled Rib Eye Steak.

  • 4 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
